A banana pancake to start the day off right 🍌. Kids love it for lunch and I like it as a dessert or healthy snack between meals. It can be baked in a loaf pan or in small muffin tins (makes 12). It is almost as classic as the granola in my house, it cannot be missing!
- 4 ripe bananas
- 3 eggs
- 3/4 cup olive oil
- 1 spoon of vanilla
- 2 cups of whole wheat flour
- 1 cup brown sugar
- 1 tablespoon baking soda
- 1/4 tablespoon salt
- 1 cup of Dasavena Original recipe
The bananas are crushed with a fork, right there the liquids are incorporated: eggs, olive oil and vanilla. Stir everything together with a large spoon. Add the dry ingredients one by one until everything is integrated. This mixture is distributed in a 4X8-inch mold (previously greased). Put the granola on top and bake for 30 minutes at 160 *C degrees.
It tastes delicious hot! (and cold too 💜).
