
Orange Pound Cake 🍊
Ingredients:
• 2 cups white flour
• ½ teaspoon baking powder
• ¼ teaspoon baking soda
• ¾ teaspoon salt
• 3 eggs
• 1 ¾ cup white sugar
• 2 teaspoons orange zest
• ⅔ cup freshly squeezed orange juice
• ⅔ cup olive oil
Procedure:
• Preheat the oven to 180ºC and grease a ring-shaped or cake-shaped mould.
• Put the dry ingredients in a bowl and stir: flour, baking powder, baking soda and salt.
• Beat the eggs and add the sugar until it becomes a thick, pale dough.
• In a separate bowl, stir together the orange juice, olive oil and orange zest and add this to the mixer mixture, alternating with the dry ingredients.
• Add the mixture to the mold and bake for 45 minutes or until a toothpick comes out clean.
• Allow to cool and unmold.
• For the glaze, put in a small saucepan: 45 gr. of butter, 1 cup of orange juice and ¾ cup of sugar.
• Turn off when it boils and pour while still hot over the cake so it can absorb it.
